Prep Time: 30 minutes
*12 small red potatoes (or as many as desired)
*Kosher Salt (to taste)
*Black Pepper (to taste)
1.) Bring 1 pot of salted water to a boil.
2.) Add in potatoes. Cook potatoes until they are fork-tender.
3.)Drizzle olive oil on cooking pan.
4.) Place tender potatoes on cooking pan.
5.) Smash (nicely) with a potato masher or a glass as I used in this case. You do not want to smash to much, just a nice gentle smash, so the potato splits apart but still can be served as a single potato.
6.) Brush Potatoes with olive oil and sprinkle with kosher salt, pepper, and any other herbs/spices you desire.
7.) Cook on the top rack of the oven at 450 degrees for 20-25 minutes until perfectly crispy!
8.) Serve as a side dish along side any other food items you love! (this evening, my kids picked out what we had for dinner with the potatoes )
