Fried Apple Rings breakfast recipe | DIY Food

“Kindness is like the snow… it beautifies everything it covers.”

Oh ..the first snow fall of the year… is finally here!   I can not express in words how it makes me feel.  It warms my heart.  Kind of like a little kid on Christmas morning, I looked out my window, saw how beautiful it was- ran downstairs, opened every curtain, made my cup of coffee, my breakfast, turned on the fireplace, and sat… looking out the window and just soaking up the view.   There is no better way to start a Sunday morning, than this.

I cooked up some amazing breakfast today and think you will love it just as much as my kids and I did!   Here it is;

2 medium apples

1 Cup Bisquick baking mix

1 Egg

Zest of 1/2 a lemon

1/2 Cup milk

Cinnamon Sugar  if desired


*Beat or stir together Bisquick baking mix, milk and eggs until smooth.  Add lemon zest and splash of cinnamon sugar (if desired)

* Core Apples:
* Slice apples crosswise in thin
* Dip apple rings into the pancake batter and place on hot greased griddle or pan until golden brown, turning one time.

*Serve hot with fresh maple syrup.

I also sprinkled a bit of cinnamon sugar on top once cooked.

Pair this yummy recipe up with some ice cream for a sweet dessert as well!

This morning as the snow was falling, we enjoyed breakfast,  and when we finished eating we read the book “The Snow Kept on Falling” that I picked up at an antique store last seems like an appropriate book for a beautiful day like today!

Enjoy your breakfast and morning coffee, then I challenge you to bundle up (if you live where it’s cold of course) and get outside, even if for just a few minutes, look up, down, around, and soak in the scenery, the beauty of the first snow fall- take it in, and ENJOY!
